                                                  Easy Holiday Cookies

4 cups flour
2 1⁄2 cups powdered sugar
1 tablespoon baking powder
2 pkg. vanilla sugar
3 eggs
2 1⁄2 sticks unsalted butter
1 lemon zest
1 lemon juice
1 cup any kind of jam mixed with little water or lemon juice

In a bowl, mix together powder sugar, flour and baking powder. Then add lemon zest, juice and eggs. Mix well and add slightly melted butter. Work it until turn to a ball.

Place it onto a floured surface. Roll dough very thin. Cut dough with a cookie cutter, then place on the baking sheet leaving 1 inch between them.

Bake for about 10-11 minutes on 350- 355 degrees F.  Don’t over bake them. Let the cookies cool on the sheet before transfer them to the cooling rack.

Repeat with the remaining dough, making sure to cool the sheets between batches. Use jam between cookies. Sprinkle with powder sugar. Next day will be soft.
                 Farmer Cheese Cake

1 lb Farmer cheese
2 cups sugar
1 lb sour cream
5 eggs
5-7 tablespoons cream of wheat
1 stick butter
2 tablespoons bread crumbs 

Separate eggs. Set aside the whites. In a big bowl mix dry ingredients, add egg yolks, farmer cheese than mix.  Add cream of wheat mix and cover with plastic and let it rest for 2 hours in the fridge.   Cover egg whites (not whipped) too and place it in the fridge.

Two hours later whip egg whites. Take out the already mixed batter and fold in the egg whites gently.

Butter the baking pan and sprinkle breadcrumbs all over.  Pour in mixture, place cubed butter on top.

Bake at 350° for 30-35 minutes or until golden brown.

Tip corner: Baking time always depends on your oven. Turn                       timer for 25 minutes first then check. Try not to                         open the oven until is down.
